Instructions

Make the cake dough

Step 1:Mix whole wheat flour, baking powder, baking soda, cinnamon
and nutmeg powder in a bowl until well blended. You can also sift the
above ingredients.
Step 2:Add the ginger paste and candied ginger and mix again.
Step 3:In another bowl, whisk the yogurt with ¼ cup of water until
smooth. Then add the oil and mix thoroughly. Set aside.
Step 4:Remember to preheat the oven to 180 degrees Celsius for 15
minutes.
Step 5:Heat ½ cup of water in the microwave or on the stove until
just hot (it does not have to boil).
Step 6:Add the jaggery to the hot water and stir until the jaggery
is dissolved. If the jaggery syrup contains impurities, strain it through
a fine-mesh sieve.
Step 7:Add the yogurt and oil mixture to the flour mixture.
Step 8:Then add the jaggery syrup.
Step 9:Fold the ingredients in well to form a smooth dough.

Bake the gingerbread dough

Step 1:Pour the dough into a greased round baking pan or loaf pan
and bake in a preheated oven at 180 degrees for 35 to 40 minutes. It took
me 41 minutes to bake the cake.
Step 2:If the top browns quickly during baking, cover with
parchment paper or aluminum foil and continue baking.
Step 3:Check the baked cake with a bamboo skewer, and it should
come out clean.
Step 4:Place the cake pan or a wire rack to cool completely.
Step 5:When cool, remove the cake from the pan and place on a board
or plate.
Step 6:Dust the cake with powdered or confectioners’ sugar, if
desired.
Step 7:Slice the gingerbread without egg and serve as is or with a
little whipped cream.
