Ingredients

  • 1/2 cup refined oil
  • 1/4 cup Melted Butter
  • 1/2 tin Nestle MILKMAID
  • 2 cups nettle a+ Nourish Milk
  • 1 tsp vanilla Essence
  • 1½ tsp vinegar
  • 2½ cups All Purpose Flour
  • 1/2Sugar
  • A pinch of salt
  • 2 tsp baking Powder
  • 1 tsp baking Soda
  • 3 tbsp honey
  • 1/2 cup water
  • 1/4 cup sugar
  • 3 tbsp mixed Fruit Jam
  • 2 tbsp water
  • Desiccated Coconut

Instructions

Step 1:Mix and whisk all wet ingredients.
Step 2:Mix all the dry ingredients.
Step 3:Mix the dry ingredients with the wet ingredients. Pour the mixture through a sieve into another bowl to make a smooth batter.
Step 4:Pour the mixture into a cake tin and bake for 15 minutes at 180 degrees Celsius.
Step 5:Once baked, set aside and allow to cool completely.
Step 6:For the honey syrup, mix honey, sugar and water and bring to a boil. Pour into a bowl and leave to cool completely.
Step 7:For the jam sauce, mix fruit jam with water, heat and bring to the boil. Pour into a bowl and leave to cool completely.
Step 8:Once the cake has cooled completely, pierce the top of the cake with a skewer. Prick small pores with a toothpick. Do not throw away the top layer of the cake. Chop it up and use it for garnish.
Step 9:Pour the honey sauce and spread it with a brush. Now pour the jam sauce and spread it over the honey sauce. Put the cake in the fridge for 10 minutes.
Step 10:Take the cake out and sprinkle coconut flakes on top for garnish. Place in the fridge for another 10-20 minutes
Step 11:Remove and serve cold.
