Instructions

Sieve dry ingredients

Step 1:Take a sieve. Hold a mixing bowl under the sifter. Add the
all-purpose flour, salt, cinnamon powder, and baking powder to the sifter.
Step 2:Sift all the dry ingredients.
Step 3:Now add the tutti frutti.
Step 4:Just mix the tutti frutti with the flour so that they are coated
with the flour.
Step 5:Grease a loaf pan with butter and oil and set aside. You can
also line the pan with buttered paper or parchment paper. Preheat the oven to
180 degrees Celsius for 15 minutes.

Make the sugar solution

Step 1:Put the sugar and water in a bowl.
Step 2:Mix the sugar with the water until all the sugar grains have
dissolved.
Step 3:After all the sugar has dissolved, add melted butter or oil. You
can melt the butter in a small saucepan and have it ready. Stir briskly with a
whisk for 2 to 3 minutes until the oil is evenly mixed with the water.
Step 4:Add 1 teaspoon vanilla extract or scrape out half of a vanilla
bean and add the tiny seeds to the solution. Mix well again. Set this sugar
solution aside.

Make the curd mixture

Step 1:In another bowl, take fresh curd or yogurt, water and vinegar.
Step 2:You can use apple cider vinegar or white vinegar. I used apple
cider vinegar. You can also use lemon juice instead of vinegar. Mix very well.
Step 3:Now add the baking soda. Stir to make sure the baking soda is
evenly mixed.
Step 4:You will see the mixture foam and bubble.

Make the Tutti Frutti cake batter

Step 1:Quickly add the sugar solution to the sifted dry ingredients.
Step 2:Then immediately add the bubbling curd solution.
Step 3:Using light hand pressure on the whisk, mix until smooth. Do not
overdo the mixing. You can even fold the wet ingredients into the dry
ingredients. Tiny lumps in the batter are okay.
Step 4:Pour the tutti-frutti cake batter into the greased or lined cake
pan.
Step 5:Gently tap the cake pan once or twice on the tabletop.

Bake the Tutti-Frutti cake

Step 1:Place the cake pan in the preheated oven.
Step 2:Bake the cake at 180 degrees Celsius/356 degrees Fahrenheit in
the preheated oven for 40 to 45 minutes, more or less as needed. Baking time
will depend on the temperature conditions in the oven and the size of the
oven.
Step 3:Check with a skewer or fork to make sure the dough is baked
thoroughly.
Step 4:Place the pan on a wire rack to cool.
Step 5:When the tutti-frutti cake has cooled completely to room
temperature, use a butter knife to loosen the edge of the cake. Invert the pan
onto a cutting board. Gently tap the bottom of the cake pan and remove the
cake.
Step 6:Cut the cake into slices.
