In this article, we’ll go over the recipe and steps to make this delectable dessert.
Ingredients:
- 6 large egg whites, at room temperature
- 1 1/2 cups of caster sugar
- 1 tablespoon of cornflour
- 1 teaspoon of white vinegar
- 1 teaspoon of vanilla extract
- 1/4 cup of cocoa powder
- 1 cup of heavy cream
- 1/2 cup of cherry jam
- 1/2 cup of pitted cherries
- Dark chocolate shavings, to decorate
Instructions:
1. Preheat the oven and prepare the baking tray
Preheat your oven to 150°C (130°C fan-forced) and line a baking tray with baking paper.
2. Make the meringue mixture
In a large mixing bowl, whisk the egg whites until they form soft peaks. Gradually add in the caster sugar, one tablespoon at a time, while continuing to whisk until the mixture is thick and glossy. Add in the cornflour, white vinegar, and vanilla extract and gently fold them into the mixture. Sift in the cocoa powder and fold it in until it is well incorporated.
3. Shape and bake the meringue
Spoon the mixture onto the prepared baking tray, using a spatula to shape it into a circular pavlova shape. Create a slight indentation in the center of the pavlova to hold the toppings later. Bake the pavlova in the preheated oven for 1 hour and 15 minutes or until the outside is crisp and the inside is soft and marshmallow-like.
4. Top with the cherry mixture and cream
Remove the pavlova from the oven and let it cool for 10 minutes before transferring it onto a serving plate. In a small bowl, mix the cherry jam and pitted cherries together. Spread the mixture over the top of the pavlova, making sure to stay within the indentation. In a separate bowl, whisk the heavy cream until it forms stiff peaks. Spoon the whipped cream over the cherry mixture.
5. Decorate with chocolate shavings and serve
Finally, sprinkle the top of the pavlova with chocolate shavings. Serve immediately, and enjoy the delicious combination of chocolate and cherries!
