Ingredients

  • 1 ½ cups all-purpose flour
  • 1 ¾ teaspoons baking powder
  • ½ cup milk
  • 1 cup white sugar
  • ½ cup unsalted butter
  • 2 large eggs
  • 2 teaspoons vanilla extract

Directions

Step 1:Preheat the oven to 175 degrees Fahrenheit. Grease and flour a 9-inch square cake pan.
Step 2:Cream the sugar and butter in a mixing bowl until light and fluffy. Add eggs one at a time, beating briefly after each addition. Stir in vanilla.
Step 3: In a separate bowl, mix flour and baking powder. Add to wet ingredients and mix well. Add milk and mix until smooth. Pour the batter into the prepared cake pan.
Step 4: Bake in preheated oven until the top springs back when lightly touched, 30 to 40 minutes.
Step 5: Remove from oven and let cool completely.

Tips

A 10-inch round pan yields similar results. To make the muffins, line a 12-muffin pan with paper cups. Divide the batter evenly among the prepared muffin cups and bake in a preheated oven for 20 to 25 minutes.
