How To Make Black Bottom Cupcakes?
My husband’s grandmother baked these muffins every year for Thanksgiving and Christmas. They became a family favourite. This year I was asked to bake them in her memory. They are very tasty and have a nice cream cheese surprise in the middle!
Ingredients
- 1 (8 ounce) package cream cheese
- 1 egg
- ⅓ cup vegetable oil
- ⅓ cup white sugar
- ⅛ teaspoon sal
- ½ teaspoon salt
- 1 cup semisweet chocolate chips
- 1 ½ cups all-purpose flour
- 1 cup white sugar
- ¼ cup cocoa
- 1 teaspoon baking soda
- 1 cup water
- 1 tablespoon distilled white vinegar
- 1 teaspoon vanilla extract
Directions
Step 1:Preheat oven to 350 degrees F (175 degrees C). Lightly butter muffin tins and set aside.
Step 2:Whisk together cream cheese, egg, sugar and salt. Stir in chocolate crisps and set aside.
Step 3:In a separate bowl, mix flour, sugar, cocoa, baking powder and salt. Add the water, oil, vinegar and vanilla. Beat until everything is well mixed. The batter will be thin.
Step 4:Fill the muffin tins 1/3 full with the chocolate batter. Top each with a spoonful of cream cheese mixture.
Step 5:Bake for 30-35 minutes.
