How To Make Easy Chocolate Truffles?
A simple but luxurious recipe for chocolate ganache truffles made with ordinary dark chocolate from the supermarket! The truffles are rich and creamy and make a great base for adding flavors of your choice (see below for suggestions). Makes about 24 truffles. Give it as a gift, an after-dinner treat, or with your coffee!

Ingredients
- 285g / 10 oz dark chocolate melts (chocolate chip, or chocolate block coarsely chopped)
- 2 tbsp (30g) unsalted butter
- 1/2 cup (125ml) cream (full fat, not low fat, not whipped)
Coating Ideas (EACH ENOUGH TO COAT 24 TRUFFLES)
- 1/2 cup desiccated coconut
- 1/4 cup unsweetened cocoa powder (Dutch Processed is darker, looks “posh”)
- 1/2 cup crushed peanuts (small, so can stick)
- 1/3 cup sprinkles or similar
- 1/4 cup icing sugar / powdered sugar
Directions
Step 1:Put the chocolate, cream, and butter in a microwave-safe bowl. microwave on high for 4 x 30 seconds, stirring in between.
Step 2:Cover the bowl with a plate and leave for 5 minutes, then stir until the chocolate is melted and smooth (this is a ganache!)
Step 3:Place the bowl in the fridge for 6 hours. Do not be tempted to freeze the mixture! (Note 2)
Place a plate or tray on which you will also arrange the rolled truffles in the fridge.
Rolling The Truffle Balls
Step 1:Place cocoa/coating of choice in a small bowl or plate.
Step 2:Remove the ganache from the refrigerator. The Chocolate mixture should be firm – softer than cold butter but harder than peanut butter.
Step 3:Get an ice pack or bag of frozen peas from the freezer and place it on a bench. Cover with a couple of paper towels (“freezer pack”).
Step 4:Take a tablespoon (using a tablespoon measure) and then a teaspoon to put the mixture into your hands (see video). Roll into a ball and place on a chilled plate. Repeat the process with the remaining chocolate mixture, chilling your hands on the freezer pack as needed.
Step 5:Once all the balls are rolled, roll in cocoa or the coating of choice. Serve at room temperature so the chocolate is nice and creamy inside!
