Ingredients

Instructions
Step 1:Move the baking sheet to the middle position and preheat the oven to 180º C. Grease and flour a 9×5-inch loaf pan. You can also line the pan with parchment paper and then grease the parchment paper with cooking spray.
Step 2:Sift flour, baking powder, baking soda, and salt into a large bowl. Set aside.
Step 3:Whisk together the orange juice, milk and vanilla extract in a measuring cup or bowl.
Step 4:Using an electric hand mixer or stand mixer, beat the butter on medium-high speed until creamy, about 3 to 4 minutes. Add the sugar and beat on high speed for 4 minutes, until the mixture is creamy and pale, scraping down the sides and bottom of the bowl with a rubber spatula as needed. Add the orange zest and beat for 1 minute.
Step 5:Turn the mixer on low and add the flour mixture in three batches, alternating with the milk-orange mixture, always starting and ending with the flour mixture; beat until everything is well combined, about 30 to 45 seconds. Do not over mix.
Step 6:Stir in the cranberries. NOTE: I like to add the fresh cranberries with a tablespoon of flour so they do not sink all the way to the bottom of the bread.
Step 7:Pour the batter into the prepared pan. NOTE: Orange cake batter is thick, so use a spatula to spread it into the pan if necessary.
Step 8:bake for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean. Let the bread cool in the pan for 10 minutes. Then remove from the pan and cool completely on a wire rack. The bread must be completely cool before glazing.
