How To Make Eggless Cheese Cake?

Instructions

Prepare sponge crust for cheesecake:

Step 1:Take 10 to 12 whole meal biscuits or crackers or lady’s
biscuits. Crush them and put them in a blender or a chopper.
Step 2:Grind to a fine powder. Put this powder in a bowl.
Step 3:Add 2 tablespoons of melted butter and mix well with a
spoon.
Step 4:Now put this mixture into a greased spring form pan.
Grease the tin very well with butter.
Step 5:Press the biscuit and butter mixture together with your
fingertips or the back of a small glass or bowl to form an even layer.
Place the tin in the fridge for 20 to 30 minutes to firm up the biscuit
layer.

Prepare cheesecake:

Step 1:In another bowl, take 3 cups of cream cheese (600 grams),
¾ cup of sugar (150 grams), 1 tablespoon of cornstarch, 1 tablespoon of
lemon juice and 1 teaspoon of vanilla extract or powder.
Step 2:Now start beating this mixture with an electric mixer.
Step 3:Beat on medium-high speed until the batter is smooth. Do
not over beat.
Step 4:Now add ½ cup of cream.
Step 5:Beat again until the cream is very well blended and you
see a homogeneous, creamy, thick, smooth mixture. Do not over beat.
Step 6:Now pour the whipped cream cheese layer into the ramekin
and smooth it out with a spatula.
Step 7:Place the ramekins in the preheated oven and bake for 30
to 40 minutes. Preheat the oven to 180 degrees Celsius for 15 minutes,
leaving both the top and bottom heaters on. Leave the pans on the middle
shelf.
Step 8:To check if the cheesecake is cooked through, the sides
should be firm and risen and the center wobbly. The sides will also look
like they are coming away from the pan. Leave the cheesecake to cool at
room temperature.
Step 9:Then cover with foil or an airtight lid and put the pans
in the fridge for at least 4 hours. You can also shop them overnight.

For the chocolate sauce:

Step 1:Take ½ cup of hot milk in a bowl. You can heat the milk in
a saucepan or in the microwave. You do not need to boil the milk. Just
let it get hot.
Step 2:Add 1 cup of coarsely chopped sweet chocolate (75 grams).
If you are using semi-sweet or dark chocolate, add sugar to taste.
Step 3:Mix very well with a spoon or spatula until all the
chocolate has dissolved.
Step 4:Leave the chocolate sauce to cool at room temperature.

Loosen the cheesecake from the mold:

Step 1:Dip a butter knife into a bowl or cup of warm water.
Step 2:Now take the butter knife and carefully push it through
the sides of the pan to release the cheesecake from the pan.
Step 3:Push the removable lid off the base and carefully remove
the cheesecake. Then remove the lid from the base.
Step 4:Place the cheesecake on a serving plate or tray.
Step 5:Drizzle with the chocolate sauce and serve. Your family or
guests can also put the chocolate sauce on the sliced cheesecake
themselves. If you like, you can add some berries such as blueberries,
blackberries or strawberries when serving. Dried fruit can also be
sprinkled over the cheesecake.
