Ingredients
320 ml | 240 ml | 7 g |
whole warm milk | warm water | dry active yeast |
3 Tbsp | 36 g | 350 g |

Instructions
Step 1:Whisk the warm milk, water, yeast and honey in the bowl of a stand mixer fitted with a dough hook or whisk. Cover and let rise for 5–8 minutes until the mixture is foamy. Note: If you are using instant yeast, you do not need to wait; just proceed to the next step.
Step 2:Add all-purpose flour (or bread flour) and whole wheat flour; mix on low until dough separates from bottom of bowl and forms a dough, about 3 – 4 minutes. Note: If using instant yeast, you will need to add the yeast along with the flour.
Step 3:Add the butter and mix in for about 2 to 3 minutes. Then increase the speed to medium and knead the dough on low for 5–8 minutes until it is smooth and supple. Note: If you do not have a stand mixer, you can also mix the dough with a large wooden spoon or rubber spatula and then knead with your hands on a clean surface. This requires a little arm strength, but it can be done.
Step 4:Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl. Cover and let rise in a warm place for 1 to 2 hours, or until doubled in size. When the dough is ready, press it down to let the air out.
Step 5:After the dough has doubled, dust the work surface with a little flour, roll out the risen dough and gently press it down to let out the air. Divide the dough into 16 pieces. Shape each piece into a smooth ball. I do this exclusively with my hands. So take a piece and just roll the dough on your work surface until it is round and smooth.
Step 6:Grease a large baking sheet.

Step 8:Preheat the oven to 425º F (218º C).
Step 9:Brush each bun generously with whole milk, then sprinkle with sesame seeds and pretzel salt, if desired.
Step 10:bake for 20 minutes, until rolls are golden brown and cooked through. Remove from oven and cool on a rack. Optional: Brush the tops of the buns with melted butter to soften and flavor the crust.
