Instructions

Preparation:

Step 1:Remove the 2 or 3 pineapple slices from the tin and drain the
syrup in the tin itself. Finely chop the pineapple slices and set aside.
Step 2:Using a serrated knife, carefully cut the cake into two equal
halves, starting from the center.
Step 3:Brush the bottom of the cake with a little pineapple juice.
This step is optional. If you do not have pineapple juice, you can brush the
cake with sugar water.
Step 4:To make sugar water, simply dissolve 2 to 3 teaspoons of sugar
in 2 to 3 tablespoons of water. Mix well and use.

Make the cream glaze:

Step 1:Whip the cream and icing sugar together with the vanilla
extract or pineapple essence in a stand mixer fitted with a whisk at high
speed until the cream is stiff.
Step 2:You can also use an electric hand mixer to whip the cream.
Step 3:Taste the whipped cream and add more icing sugar if needed.
Step 4:The cream should be stiff, i.e. when you turn the bowl, the
cream should not fall down.
Step 5:Mix the finely chopped pineapple with ¼ or ⅓ of the whipped
cream in a separate bowl.

Prepare the pineapple tart:

Step 1:Spread the pineapple cream glaze evenly on the bottom slice.
Step 2:Place the other half of the cake on top.
Step 3:Now spread the remaining whipped cream evenly over the top and
sides of the cake using a palette knife or spatula.
Step 4:Decorate the cake with a few more pineapple slices.
Step 5:Place the pineapple cake in the fridge for 2 to 3 hours so
that the cream glaze sets.
Step 6:Serve the eggless pineapple cake immediately.
Step 7:You can also keep it covered in the refrigerator and serve it
later.
Step 8:It is advisable to finish this pineapple cake within a day or
two.
