FRESH CHERRY & GOOSEBERRY CAKE

 

INGREDIENTS

  • 1 cup unsalted soft butter
  • 2 cups granulated sugar
  • 6 egg yolks
  •  2 teaspoons vanilla paste or pure vanilla extract
  •  3 cups cake flour
  •  1 tablespoon + 1/2 teaspoon baking powder
  •  3/4 teaspoon salt
  •  1 1/2 cups milk

INSTRUCTIONS

  • Preheat oven to 350 degrees. Prepare baking pans – set aside. Sift dry ingredients – set aside.
  • In the bowl of an electric mixer, beat the butter with the whisk until smooth.
  • Add the sugar and continue to beat the butter until pale and fluffy.
  • Beat in the vanilla and eggs, one at a time, on medium-low speed. Once the ingredients are mixed, stop the mixer and scrape the bottom of the bowl.
  • Start and finish with the dry ingredients, alternating between mixing in the milk and dry ingredients with the mixer on medium speed. Be careful to scrape the bowl between additions and not over-mix.
  • Pour the batter into the prepared tins and bake until done. Baking time will vary depending on the size of the pan.

Whipped cream with almonds

  • 2 cups heavy whipping cream
  • 1 teaspoon almond extract
  •  3/4 teaspoon pure vanilla extract
  •  3 tablespoons granulated sugar
