This vintage coffee cake made from a baking mix is tender and moist, with lots of cinnamon flavor and a powdered sugar glaze. A wonderful way to start the day.

Ingredients

  • 2/3 cup packed light brown sugar
  • 1 1/4 teaspoons cinnamon
  • 1 box yellow cake mix
  • 1/3 cup vegetable oil
  • 1 cup sour cream
  • 1/4 cup water
  • 4 large eggs

Glaze

  • 1 cup powdered sugar
  • 3 tablespoons heavy cream
  • 1/2 teaspoon vanilla extract

Directions

  1. Preheat oven to 325 degrees and spray a 9×13-inch baking dish with cooking spray.
  2. In a large mixing bowl, combine cake mix, sour cream, vegetable oil, water, and eggs. Beat until well blended.
  3. In a small bowl, combine brown sugar and cinnamon.
  4. Pour half of the batter into the prepared pan and spread evenly. Sprinkle with half of the brown sugar mixture.
  5. Pour the remaining batter over the top and spread evenly. Sprinkle the remaining brown sugar mixture on top
  6. and bake for 40 to 50 minutes, or until the cake is set. Let cool slightly.
  7. Mix all glaze ingredients in a small bowl and drizzle over the cooled cake.
