Ingredients
- nonstick cooking spray
- ½ cup all-purpose flour
- ¼ cup white sugar
- ½ teaspoon baking powder
- ½ teaspoon vanilla extract
- 2 tablespoons white sugar
- 2 tablespoons water
- 1 large egg, separated, divided
- 1 ½ teaspoons melted butter
- 1 pinch salt
- 2 tablespoons confectioners’ sugar, or to taste
Directions
Step 1:Preheat a hot air fryer to 370 degrees F (185 degrees C). Spray a 7-cavity silicone mould with non-stick spray.
Step 2:Whisk flour, 1/4 cup plus 2 tablespoons white sugar, water, egg yolks, melted butter, baking powder, vanilla and salt in a large bowl until well combined.
Step 3:Beat the egg whites in a small bowl with an electric mixer on medium speed until soft peaks form. Fold the egg whites into the batter. Using a small ice cream scoop, pour the batter into the prepared mould. Place the mould in the basket of the hot air fryer.
Step 4:Deep-fry in the preheated deep-fryer for 10 minutes. Carefully remove the mould from the basket, take out the fritters and turn them over onto a piece of parchment paper.
Step 5:Place the parchment paper with the fritters back into the basket of the deep fryer. Bake for a further 4 minutes. Remove the fritters from the frying basket and dust with icing sugar.
