Ingredients

Pumpkin Cake:

  • ¾ cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup white sugar
  • ⅔ cup pumpkin puree
  • 3 large eggs, beaten
  • ½ teaspoon ground cinnamon

Cream Cheese Filling:

  • 2 tablespoons butter, softened
  • 8 ounces of cream cheese, softened
  • 1 cup powdered sugar, or more to taste
  • ¼ teaspoon vanilla extract

Directions

Step 1: Preheat the oven to 375 degrees F (190 degrees C). Grease a 10×15-inch jelly mold.
Step 2: Prepare cake: Mix sugar, pumpkin puree, eggs, and cinnamon in a mixing bowl.
Step 3: In a separate bowl, mix flour and baking powder. Add flour mixture to pumpkin mixture and mix until batter is smooth. Spread evenly in the prepared pan.
Step 4: Bake in preheated oven until cake springs back when lightly touched, 15 to 25 minutes. Remove from oven and let cool for 5 minutes.
Step 5: Turn the cake out onto a cotton tea towel (not terry cloth). Starting at a short edge, roll the cake into the towel and let it cool, seam side down, for about 15 minutes.
Step 6: While the cake is cooling, prepare the filling: Beat cream cheese, powdered sugar, butter, and vanilla in a mixing bowl until smooth.
Step 7: When the cake is completely cool, unroll and remove the towel. Spread the filling all the way to the edges of the cake. Re-roll the cake without the towel. Wrap with plastic wrap and refrigerate until ready to serve.
Step 8: To serve, sprinkle powdered sugar over the roll and cut it into 10 portions.
