Summer is upon us, and what better way to beat the heat than with a refreshing popsicle? In this article, we’ll explore a recipe for mango, coconut, and mint popsicles that are sure to satisfy your sweet tooth while keeping you cool. From selecting the perfect ingredients to freezing your popsicles, we’ll guide you through every step of the process.
Ingredients
- Mangoes
- Coconut milk
- Fresh mint leaves
- Sugar
- Water
- Lime juice
Selecting Your Ingredients
When selecting your mangoes, look for ones that are ripe but still firm to the touch. You’ll also want to choose mangoes that are sweet and fragrant, as these will provide the best flavor for your popsicles. If you can’t find fresh mangoes, you can use frozen mango chunks instead.
For the coconut milk, look for unsweetened, full-fat coconut milk. This will give your popsicles a rich and creamy texture. If you prefer a lighter popsicle, you can use light coconut milk instead.
When selecting your mint leaves, choose fresh leaves that are bright green and fragrant. Avoid leaves that are wilted or discolored, as these may not have as much flavor.
Preparation
Now that you’ve selected your ingredients, it’s time to start preparing your popsicles.
Step 1. Place the diced mangoes in a blender and puree until smooth.
Step 2. Add the coconut milk, mint, olive oil, and salt and blend until combined.
Step 3. Taste and adjust the flavors to your preference. Add a few drops of lime juice, honey or agave syrup if desired.
Step 4. Pour the mango mixture into popsicle molds and freeze for at least 4 hours or until solid.
Step 5. When ready to serve, run the popsicle molds under warm water or dip in a bowl of warm water for a few seconds to help release the popsicles.
Enjoy!
