History of Mango Phirni

Ingredients:

  • 2 cups of cooked basmati rice
  • 1 large ripe mango
  • 1 ½ cups of water
  • 1 cup of full-fat milk
  • 1/3 cup of coconut milk
  • 3 tablespoons of sugar
  • Pinch of saffron
  • 1 tablespoon of ghee or olive oil
  • Pinch of cardamom powder

Instructions:

Step 1. Peel and cut the mango into small cubes and set aside.

Step 2. Heat the ghee or olive oil in a saucepan over medium-high heat and fry the basmati rice for a few minutes until it’s lightly browned.

Step 3. Add the water, milk, coconut milk, and sugar to the pan and stir to combine.

Step 4. Bring the mixture to a boil and reduce the heat to low. Simmer for 10 minutes, stirring occasionally.

Step 5. Add the mango cubes, saffron, and cardamom powder to the pan and stir to combine. Simmer for an additional 10 minutes, stirring occasionally.

Step 6. Remove the pan from the heat and let cool for a few minutes.

Step 7. Transfer the phirni to a bowl and chill in the refrigerator for at least an hour or overnight.

Step 8. Serve cold, topped with additional mango cubes. Enjoy!
