Steps to Make Mocha Macarons

Step 1: Prep the Ingredients

Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper. Sift together the powdered sugar, almond flour, instant coffee powder, cocoa powder, and salt in a bowl. Set aside.

Step 2: Whip the Egg Whites

In a separate mixing bowl, beat the egg whites on medium speed until they become frothy. Add the granulated sugar and beat until stiff peaks form. Fold in the sifted dry ingredients and mix until a smooth batter forms.

Step 3: Pipe the Batter

Transfer the batter to a piping bag with a round tip. Pipe the batter onto the prepared baking sheet in small circles. Tap the baking sheet on a flat surface to release any air bubbles. Let the macarons sit at room temperature for 30 minutes to an hour until they develop a skin.

Step 4: Bake the Macarons

Bake the macarons in the preheated oven for 12-15 minutes. Once done, remove the macarons from the oven and let them cool on the baking sheet.

Step 5: Make the Filling

In a mixing bowl, cream together the softened butter, powdered sugar, instant coffee powder, heavy cream, and vanilla extract until smooth.

Step 6: Assemble the Macarons

Once the macarons have cooled, pipe the filling onto one macaron shell and sandwich it with another macaron shell.
