Orange muffins are a delicious and refreshing pastry, perfect for breakfast or
as a snack. They are made from a mixture of flour, sugar, eggs, milk, and orange
zest or juice, which gives them their distinctive citrus flavor. The muffins are

Instructions

Preparation of the orange muffin batter:

Step 1:First sift whole wheat flour, cornstarch, baking powder,
baking fizzy drink, and a pinch of salt into a mixing bowl or pan.
Step 2:Set the sifted dry mixture aside.
Step 3:To make the orange zest, use a zester or grater to grate the
zest from a medium orange and set aside.
Step 4:Line a muffin tray or muffin tin with muffin cups. Preheat the
oven to 180 degrees Celsius/356 degrees Fahrenheit for about 10 to 12
minutes.
Step 5:Put the sugar and oil in another bowl. Mix just until combined
and set aside.
Step 6:Prepare the orange juice in an electric juicer or blender. If
you’re using a blender, remove the seeds from the orange segments and then
puree them. Then strain the orange juice through a fine sieve. I made 1 cup
of orange juice from 3 oranges.
Step 7:add 1 cup of orange juice to the sugar and oil mixture.
Step 8:Stir briskly and very well until the sugar dissolves and the
mixture looks even.
Step 9:Add this orange juice mixture to the sifted dry flour mixture.
Also, add the orange zest.
Step 10:Using a whisk, mix the mixture with light pressure from your
hands until smooth. Don’t mix too much.

Bake orange muffins:

Step 1:Spoon the batter into the muffin tins until it fills ¾ of the
tins. Gently shake the tin to remove any excess air bubbles.
Step 2:Place the muffin tray in the preheated oven. Bake the orange
muffins at 180 degrees Celsius/356 degrees Fahrenheit for 20 to 25 minutes
or until a bamboo skewer inserted into the muffins comes out clean.
Step 3:Baking time will vary depending on the type and size of the
oven, so take this into account.
Step 4:Place the muffin tray on a wire rack for about 10 minutes.
Then remove the muffins from the tin.
Step 5:You can serve the orange muffins plain or dusted with icing
sugar or cocoa powder, or prepare any chocolate icing or glaze. The recipe
makes 8 regular-sized muffins.

Making chocolate icing:

Step 1:Put cocoa powder in a small pan or saucepan.
Step 2:Add orange juice, sugar, oil, and water.
Step 3:Stir everything together and keep the pan on the cooker on low
heat.
Step 4:Stir until the mixture thickens a little. The sugar should
also dissolve completely.
Step 5:When the glaze is still warm, spread it on the muffins. You
can also slice the orange muffins and then spread the glaze on the bottom
slice. Cover with the top slice and spread the glaze on top. Let the glaze
cool before serving.
Step 6: Serve the egg-free orange muffins as a sweet snack or as
a dessert.
