Ingredients
140 g | 50 g | 1 tbsp |
whole wheat pastry flour | natural cocoa powder | baking powder |
1 tbsp | ¼ tbsp | 225 g |
baking soda | salt | bananas |
145 g | 1 tbsp | 65 g |
sweetened condensed milk | vanilla extract | applesauce |
2 Tbsp | 120 g | 150 g |
coconut oil | plain yogurt | dark chocolate morsels |
Instructions
Step 1:Preheat the oven to 350º F (180º C). Line a 12-cup muffin tray with paper cups.
Step 2:In a medium bowl, whisk together the whole wheat flour, cocoa powder, baking powder, baking soda, and salt.
Step 3:In the bowl of a stand mixer fitted with a paddle attachment or in a large bowl fitted with an electric mixer, combine the ripe bananas, sweetened condensed milk, vanilla, applesauce, oil and yogurt. Mix until everything is well blended. Add dry ingredients and mix until just combined. stir in 1/2 cup chocolate French fries. Note: You can also make these cookies without an electric mixer by mashing the bananas with a fork and mixing in a bowl until well combined.
Step 4:Use a large cookie scoop (about 3 tablespoons) to spread the batter into the prepared muffin tin.
Step 5:Sprinkle the remaining mini chocolate French fries on the top of each muffin.
Step 6:bake for 22–25 minutes, or until a toothpick inserted in the center comes out clean. Let muffins cool in the muffin tin for 5 minutes, then transfer to a wire rack to cool further.
