Everyone loves cake pops, and this versatile recipe is easy to make with any cake mix or frosting. Cake pops are small, delicious desserts instead of large pieces of cake or cupcakes.

Ingredients

  • ½ cup vegetable oil
  • 1 (16-ounce) container of prepared chocolate frosting
  • 18 lollipop sticks
  • 1 (14-ounce) bag of chocolate melting mix
  • 1 (0.75 ounces) tube decorating icing
  • 1 (15.25 ounce) package of yellow cake mix
  • 1 cup water
  • 3 large eggs
  • 1 tablespoon colored sugar sprinkles or as needed (optional)

Directions

Step 1: Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13-inch baking dish.
Step 2: Beat baking mix, water, oil, and eggs in a bowl with an electric mixer on low speed for 30 seconds. Increase speed to medium and beat for an additional 2 minutes. Pour batter into the prepared baking dish.
Step 3: Bake in preheated oven until a toothpick inserted in the center comes out clean (28 to 33 minutes). Remove from oven and let cool completely, for at least 1 hour.
Step 4: Crumble the cooled cake into a large bowl. Stir the frosting into the crumbled cake until the mixture is sticky and beginning to come together, but not too smooth. Refrigerate for at least 30 minutes until chilled.
Step 5: Roll the cake mixture into eighteen 1 1/2-inch balls and place them on a baking sheet.
Step 6: Place about 1/4 cup of candy melts in a microwave-safe bowl. Melt in the microwave on high for about 20 seconds.
Step 7: Insert a lollipop stick halfway into each ball of cake mix. Carefully dip the balls into the melted chocolate to coat them, then place them upright in a Styrofoam block. Decorate with chocolate sprinkles while the chocolate is still wet. Repeat the process for the remaining cake pops, melting more Candy Melts as needed.

Tips

You can use any flavor or brand of frosting or cake mix from the package for these cake pops. If you use a different cake mix, just follow the directions and ingredient amounts on the package to make the cake. Ingredients 1 through 4 (above) refer to the Betty Crocker mix used in this recipe.
After step 3, you can freeze the cake for up to 2 weeks. When you are ready to make the cake pops, simply thaw the cake completely (3 hours at room temperature or 8 hours in the refrigerator) and proceed to step 4.
