If you’re using beef, choose a cut that has marbling or connective tissue, such as chuck roast, brisket, or short ribs.
Ingredients:
- 3 lbs. beef chuck roast or goat meat
- 1 onion, chopped
- 4 cloves garlic, minced
- 3 tbsp. vegetable oil
- 2 tbsp. tomato paste
- 2 tsp. cumin
- 1 tsp. smoked paprika
- 1 tsp. dried oregano
- 1 tsp. salt
- 1/2 tsp. black pepper
- 3 cups beef or chicken broth
- 1 cup chopped tomatoes
- 1/2 cup chopped cilantro
- Corn tortillas
- Lime wedges
Instructions:
Step-1 Preheat your oven to 350°F (175°C).
Step-2 In a large Dutch oven or oven-safe pot, heat the vegetable oil over medium-high heat. Add the chopped onion and minced garlic, and sauté until softened.
