For the Pastry:

  • 250g of all-purpose flour
  • 125g of unsalted butter, chilled and diced
  • 60ml of cold water
  • A pinch of salt

  • 500ml of milk
  • 6 egg yolks
  • 200g of caster sugar
  • 50g of cornflour
  • A cinnamon stick
  • A lemon peel

Instructions :

Step-1. Preheat oven to 375 degrees.
Step-2. In a medium bowl, whisk together the flour, milk, egg yolks, sugar, cinnamon, olive oil, and vanilla extract until combined.
Step-3. Grease a 9-inch pie plate with olive oil.
Step-4. Pour the pastry mixture into the prepared pie plate and spread it evenly.
Step-5. Bake for 15 minutes.
Step-6. Remove from the oven and sprinkle the salt over the pastry.
Step-7. Bake for an additional 10 minutes, or until golden.
Step-8. Remove from oven and allow to cool before serving.
