The Perfect Chocolate Cake

Ingredients
- 2 teaspoons vanilla extract
- ½ cup (112 g) vegetable oil
- 1 cup (240 g) buttermilk, room temperature
- 2 teaspoons baking soda
- 1 ¾ cup (210 g) all-purpose flour
- 1 teaspoon kosher salt
- 2 large eggs, at room temperature
- 2 cups (400 g) granulated sugar
- ¾ cup (90 g) unsweetened cocoa powder
- 1 teaspoon baking powder
- 1 cup (237 g) of freshly brewed coffee
Instructions

Sift flour, sugar, cocoa, baking soda, baking powder, and salt into a bowl
and mix. - In another bowl, mix the buttermilk, oil, eggs, and vanilla.

With the mixer on low, slowly add the wet ingredients to the dry
ingredients. Add the coffee and, using a rubber spatula, stir the bottom
of the bowl until everything is well blended -
Pour the batter into two prepared 8-inch round cake pans and bake at 350°F
for 30-40 minutes, until a cake tester or toothpick comes out mostly clean
(not wet). -
Cool in the pans for about 10 minutes, then turn out onto a cooling rack
and cool completely.
