Ingredients:
For Cake:
- cooking spray with flour
- 1 cup white sugar, divided
- 5 large eggs, separated, divided
- 1 cup all purpose flour
- ⅓ cup milk
- 1 ½ teaspoon baking powder
- 1 teaspoon vanilla extract
For Filling and Topping:
- 1 can (14 ounces) sweetened condensed milk
- 1 can (12 fluid ounces) condensed milk
- 1 pint heavy whipping cream, divided
- 10 maraschino cherries
Directions:
STEP:1
Prepare the cake: Preheat the oven to 350 degrees F (175 degrees C). Spray a 9-inch springform pan with floured cooking spray.
STEP:2
beat 3/4 cup sugar and egg yolks in a mixing bowl with an electric mixer until light in color and doubled in volume. Stir in flour, milk, baking powder and vanilla.
STEP:3
Beat egg whites in a glass or metal bowl until soft peaks form. Gradually add remaining 1/4 cup sugar and continue beating until medium-high peaks form. fold 1/3 of the egg white mixture into the egg yolk mixture to lighten. Fold in remaining beaten egg whites and pour batter into prepared pan.
STEP:4
Bake in a preheated oven until a cake tester inserted in the centre comes out clean, 45 to 50 minutes. Cool on a wire rack for 10 minutes. Loosen edges with a knife, then remove sides. Let the cake cool completely on the wire rack, about 20 minutes longer.

Turn the cake out onto a deep serving platter and remove the bottom of the pan. Prick the cake all over with a two-pronged meat fork or cake server.

Prepare the filling and topping: Mix condensed milk, evaporated milk and 1/4 cup whipping cream in a bowl. measure out 1 cup of the milk mixture and shop in the refrigerator for another use. Slowly pour remaining milk mixture over cake until absorbed.

Place remaining whipping cream in a chilled glass or metal bowl. Whip with an electric mixer until thick and spreadable. Spread whipped cream over cake and garnish with cherries.
