Ingredients
- 500g puffed wheat cereal
- 250ml mascarpone
- 350ml double cream
- 200g malted milk biscuits
- 200g milk chocolate, chopped
- 200g white chocolate, chopped
Directions
STEP 1: Line a 30 cm x 25 cm square cake pan with baking paper. Place enough malted milk cookies in the bottom of the pan so that they do not overlap. Meanwhile, melt the white and milk chocolate either in a heatproof bowl over a pot of barely simmering water or in the microwave in short bursts. Set aside to cool.
STEP 2: Beat the mascarpone in a large bowl to loosen it up a bit. Add the heavy cream and beat with electric beaters until the mixture holds its shape. Pour half of the mixture into another large bowl.
STEP 3: Add the cooled white chocolate to the one bowl with the cream mixture and stir to combine. Add the cooled milk chocolate to the other half of the mixture and stir. Take half of the puffed wheat flakes and fold them into the white chocolate mixture. Pour this mixture over the biscuit layer in the mold and smooth it out with a spatula. Add another layer of malt cookies on top and then pour the milk chocolate mixture on top. Sprinkle with the remaining muesli and refrigerate overnight. Remove from the mold, slice with a hot knife and serve.
