Creating a Sourdough Starter:

The first step in making sourdough bread is to create a sourdough starter. This is a mixture of flour and water that has been allowed to ferment for several days, and which will provide the yeast and bacteria necessary to make the bread rise. Here’s how to make a sourdough starter:

Mix together 1 cup of flour and 1/2 cup of water in a glass jar. Stir well to combine.

Cover the jar loosely with a clean cloth or plastic wrap and leave it in a warm, draft-free place.

  • 1 1/2 teaspoons of salt
  • 1 1/2 cups of active sourdough starter

Instructions:

  1. In a large bowl, mix together the flour and salt.
  2. Add the sourdough starter and warm water, and stir until a shaggy dough forms.
  3. Turn the dough out onto a floured surface and knead for 10-15 minutes, until the dough becomes smooth and elastic.
  4. Place the dough in a lightly greased bowl, cover with a clean cloth, and let it rise in a warm, draft-free place for 4-6 hours.
  5. After the dough has risen, punch it down and shape it into a round loaf. Place the loaf on a floured baking sheet or in a bread pan.
  6. Let the dough rise again for 1-2 hours, until it has doubled in size.
  7. Preheat your oven to 450°F. If desired, score the top of the loaf with a sharp knife to allow for even rising in the oven.
  8. Bake the bread for 30-35 minutes, until it is golden brown and sounds hollow when tapped on the bottom.
