History of Gerbeaud Cake

Gerbeaud cake, also known as Gerbeaud slice or Zserbó, is named after its creator, Emil Gerbeaud, a Hungarian confectioner. Gerbeaud was a Swiss-Hungarian citizen who moved to Budapest in 1884 and opened his own pastry shop. He wanted to create a cake that would reflect the elegance and refinement of the Austro-Hungarian Empire, and that would be enjoyed by the aristocrats and high society of Budapest.

The first Gerbeaud cake was made in 1885 and became an instant success. It is said that the recipe was inspired by a Hungarian dish called “dobos torte” and a French pastry called “napoleon.” Gerbeaud added his own twist to these classics, using a walnut filling and a layer of apricot jam. The cake was topped with chocolate glaze and cut into small, bite-sized pieces.

Since then, Gerbeaud cake has become one of the most popular desserts in Hungary and is often served during special occasions, such as weddings and birthdays. It has also gained popularity in other parts of Europe and the world.

Ingredients

– 2 cups of all-purpose flour

– 1 cup of light brown sugar

– ¾ cup of cocoa powder

– 1 teaspoon of baking soda

– 2 eggs

– ¾ cup of milk

– ⅓ cup of vegetable oil

– 2 tablespoons of vanilla extract

– 2 tablespoons of olive oil

– 1 teaspoon of ground cinnamon

– ½ teaspoon of ground nutmeg

– Pinch of salt

Instructions

1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan with olive oil and line the bottom with parchment paper.

2. In a medium bowl, whisk together the flour, brown sugar, cocoa powder, baking soda, cinnamon, nutmeg, and salt until combined.

3. In a separate bowl, beat together eggs, milk, vegetable oil, vanilla extract, and olive oil until combined.

4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.

5. Pour the batter into the prepared pan and spread it evenly.

6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
