  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

For the Filling:

  • 4 large eggs, at room temperature
  • 1 and 1/2 cups granulated sugar
  • 1/2 cup freshly squeezed lime juice (from about 4 limes)
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • Zest of 2 limes

Instructions

Making the Crust:

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking dish with parchment paper.
  2. In a large mixing bowl, beat the butter and sugar together until light and fluffy, about 3-4 minutes.
  3. Add in the flour and salt, and mix until just combined.

  4. Bake the bars for an additional 25-30 minutes, or until the filling is set and the edges are lightly browned.
  5. Remove from the oven and let cool to room temperature before slicing into bars.
