Instructions

Soak nuts and dried fruit:

Step 1:First, chop all the nuts and dried fruits and put them in a
bowl or container. Pour rum into the bowl or vessel.
Step 2:Cover the jar and leave the dried fruit to soak for 12 or 24
hours or 3 days. If you used apple juice or orange juice to soak the dried
fruit, cover the bowl with an airtight lid or cling film and put it in the
fridge.
Step 3: Stir or shake the bowl or jar after a few hours or every
day so that all the nuts and dried fruit are well-soaked.

Other preparations:

Step 1:In a spice mill or dry grinder, grind the spices listed above
under the heading “for ground spice mixture” except for the ginger powder.
Set aside.
Step 2:Prepare a loaf tin or round cake tin by greasing it very well
with oil. You can also line the cake tin with buttered paper.
Step 3: Preheat the oven to 180 degrees Celsius for 20 minutes.

Preparation of cake dough:

Step 1:Sift the flour, baking powder, and ground spice mixture. You
can also add ginger powder at this step. Note that ginger powder is
optional.
Step 2:Add the soaked dried fruits along with the remaining rum or
apple juice/orange juice.
Step 3:Add oil and demerara sugar or brown sugar of your choice or
regular white sugar. Add vanilla extract as well. Gently mix the ingredients
until just combined, but not too much.
Step 4:Put soy milk in a bowl or mug. Now add the apple cider vinegar
and stir gently.
Step 5:Add the baking powder and stir thoroughly. Add this frothy
mixture to the cake batter.
Step 6:Stir and mix quickly but evenly.

Bake:

Step 1:Pour the batter into the cake tin.
Step 2:Shake the tin gently so that the batter is evenly distributed
throughout the tin.
Step 3:Use a spatula to smooth the top of the cake.
Step 4:Bake the cake in a preheated oven at 356 degrees Fahrenheit
(180 degrees Celsius) for 50 to 60 minutes, more or less depending on the
type of oven.
Step 5:The eggless fruit cake will have a nice golden brown color.
Check if the cake is done by inserting a toothpick into the center.
Step 6:Let the cake tin cool completely on a wire rack or stand
before turning the cake out onto a plate.

Storage:

Step 1:Wrap the Christstollen in cling film or shop in an airtight
container at room temperature for 3 to 4 days.
Step 2:The flavors mature over time and so the egg-free fruitcake
will still taste great after a few days. If you live in a warm climate, shop
for the Christmas cake in the refrigerator.
