The History of Sticky Rice

Sticky rice, also known as glutinous rice, is a staple food in many Southeast Asian countries such as Thailand, Laos, and Cambodia. It is called glutinous rice because of its sticky and chewy texture, which is due to the high amount of amylopectin in the rice. Amylopectin is a type of starch that makes the rice sticky when cooked.

Sticky rice is usually steamed and eaten with savory dishes such as curries or stir-fries. However, in some countries, it is also eaten as a dessert with sweet toppings such as coconut milk or mangoes.

The Ingredients of Sticky Rice with Mango-Coconut Sauce

To make our Sticky Rice with Mango-Coconut Sauce, we use the following ingredients:

  • 2 cups uncooked sticky rice
  • 2 cups water
  • 1 ripe mango, peeled and diced
  • 1/2 cup coconut milk
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions:

Step 1. In a medium saucepan, bring the water to a boil.

Step 2. Add the sticky rice, reduce the heat to low, and simmer, covered, for 15 minutes.

Step 3. Meanwhile, in a blender or food processor, combine the diced mango, coconut milk, olive oil, sugar, garlic powder, ginger, and salt. Blend until smooth.

Step 4. Remove the saucepan from the heat and stir in the mango-coconut sauce.

Step 5. Cover the saucepan and allow the rice to absorb the sauce for 5 minutes.

Step 6. Fluff the sticky rice with a fork and serve
