Ingredients
- 1⅛ teaspoon baking powder
- ¼ cup vegetable oil
- ½ cup white granulated sugar
- 1¼ teaspoon vanilla extract
- 1¼ cups all-purpose flour
- ¼ teaspoon baking soda
- ½ cup plain thick yogurt
Instructions
Step 1. Preheat the oven to 350 degrees F.
Step 2. Use 6 cupcake liners to line a cup tray, then sieve the flour.
Step 3. Using a whisk, beat the yogurt in a bowl, taking out any lumps.
Step 4. Add white sugar and mix it completely dissolves.
Step 5. Add baking soda and baking powder to the yogurt mixture and mix until well combined.
Step 6. Allow it to sit for at least 5 minutes, try not to let the mixture sit for more than 5 minutes.
Step 7. Add vegetable oil and vanilla, and mix to combine.
Step 8. Add the flour in batches and fold the mixture gradually, until there are no lumps.
Step 9. Evenly divide the batter between the lined cupcake liners.
Step 10. Bake until a toothpick inserted in the middle of one of the cupcakes comes out clean.
Step 11. Allow the cupcakes cool in the cupcake tray for a few minutes.
Step 12. Place them on a cooling rack to cool completely.
