Ingredients:

  • 2 large eggplants
  • 1 cup all-purpose flour
  • 4 large eggs
  • 2 cups panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper, to taste
  • 2 cups tomato sauce
  • 2 cups shredded mozzarella cheese
  • Fresh basil leaves, for garnish

Step-by-Step Instructions:

STEP:1
Prepare the eggplant: Slice the eggplant into 1/4 inch rounds, then sprinkle each slice with salt and let sit for 30 minutes to draw out excess moisture. Rinse the slices and pat dry with paper towels.

STEP:2
Prepare the breading: In a shallow dish, combine the flour, garlic powder, onion powder, salt, and pepper. In a separate dish, whisk the eggs. In a third dish, combine the panko breadcrumbs and grated Parmesan cheese.

STEP:3
Bread the eggplant: Dip each eggplant slice into the flour mixture, then into the egg mixture, and finally into the breadcrumb mixture. Press the breadcrumbs onto the eggplant to ensure they stick.

STEP:4
Bake the eggplant: Preheat the oven to 375°F. Arrange the breaded eggplant slices on a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until golden brown and crispy.

STEP:5
Prepare the tomato sauce: In a saucepan, heat the tomato sauce over medium heat. Add salt and pepper to taste.

STEP:6
Assemble the dish: In a 9×13 inch baking dish, spread a thin layer of tomato sauce on the bottom. Add a layer of eggplant slices, followed by a layer of mozzarella cheese. Repeat until all the ingredients are used up.

STEP:7
Bake the dish: Cover the dish with foil and bake at 375°F for 25-30 minutes, or until the cheese is melted and bubbly. Remove the foil and bake for an additional 5-10 minutes to brown the cheese.

STEP:8
Garnish and serve: Remove the dish from the oven and let it cool for a few minutes. Garnish with fresh basil leaves and serve hot.
